Amaranth microgreens have a nutty, rich flavour and are 15% protein. They are rich in vitamins A, B, C, and E, calcium, iron, magnesium, niacin, phosphorus, potassium, and amino acids. They take about 20 days from planting to harvest, but are worth the wait because the tiny sprouts are brightly green and pink colour (when grown under lights). So they make a brilliant eye-catching garnish or topping to just about any dish.
Just sprinkle the tiny seeds onto the surface of pre-moistened, sterilized seed starting soil, and wet everything down with a mist sprayer. Place the planted tray into the Growlight Garden or beneath other grow lights, keeping the lights about 10cm (4") above the soil. As the seedlings grow, raise the lights so they remain this distance from the tops of the plants. Use 1.4g of Amaranth seed for each 10x20" seed flat.
